At The Caledonian Edinburgh, our kitchens blend Scottish heritage with modern culinary craft. We are seeking a Restaurant Sous Chef to support the Head Chef in leading the brigade, delivering exceptional food quality, operational excellence and a consistently elevated dining experience

The Person:

• An experienced kitchen leader with strong supervisory or management capability
• Calm, organised and confident running service and deputising for the Head Chef
• Skilled in menu execution, specification compliance and operational consistency
• A natural mentor who develops teams through coaching, feedback and
• Knowledgeable in HACCP, food safety, kitchen systems and risk management.

The Role:

• Support the Head Chef in leading kitchen operations and team performance
• Oversee food preparation, cooking and presentation to luxury brand standards
• Maintain productivity, food cost control and adherence to specifications
• Ensure safe, compliant and efficient kitchen operations across all sections
• Champion training, succession planning and continuous improvement.

Key Responsibilities

• Lead service, guiding Chef de Parties, Commis and kitchen porters
• Maintain stock levels, commodity checks, waste control and supplier compliance
• Oversee cleaning schedules, maintenance logs and safety documentation
• Brief service teams on product availability, specials and recommended dishes
• Ensure all dishes meet specification, costings and brand presentation standards.
