At The Marylebone Hotel, part of The Doyle Collection, we are looking for an experienced and passionate Breakfast Manager to lead our breakfast operation within 108 Brasserie.

This is a fantastic opportunity for a hospitality professional who takes pride in delivering exceptional guest experiences from the very start of the day. As Breakfast Manager, you will lead and inspire the team to deliver outstanding service, ensuring every guest receives a warm welcome, a highly personal experience and the highest standards of food and beverage service. You will create an environment where colleagues feel supported and valued, fostering a strong sense of belonging while driving operational excellence and commercial performance.

• Lead the daily breakfast operation, ensuring exceptional service standards and attention to detail at all times.
• Champion Forbes Travel Guide standards and create memorable guest experiences through genuine, personalised hospitality.
• Ensure every guest receives a warm welcome and feels recognised, valued and cared for throughout their dining experience.
• Inspire, coach and develop the team to deliver excellence in service and product knowledge.
• Create a positive and inclusive culture where colleagues feel a sense of belonging and are encouraged to grow and succeed.
• Manage staffing levels, rosters and labour costs to maximise productivity and service delivery.
• Monitor guest feedback and implement continuous improvements to enhance the breakfast experience.
• Work closely with the kitchen team to ensure smooth service and consistently high-quality food presentation.
• Drive breakfast revenue opportunities while maintaining strong cost control and profitability.
• Ensure compliance with all company policies, health and safety regulations and operational procedures.
• Maintain excellent communication with all hotel departments to ensure guest expectations are exceeded.
• Act as Duty Manager when required, supporting the wider hotel operation.

• Previous experience in a Breakfast Manager, Restaurant Manager or Assistant Restaurant Manager role within a quality hotel or restaurant environment.
• A passionate hospitality professional who leads by example and enjoys developing others.
• Strong organisational and communication skills with the ability to manage a busy service period.
• A natural host with a genuine passion for creating memorable guest experiences.
• Commercially aware with experience managing labour costs, service standards and operational performance.
• Excellent food and beverage knowledge and a commitment to delivering exceptional service.
