Bar Manager

We're looking for a passionate, energetic and talented Bar Manager to join our opening team.

What You'll Do

As Bar Manager, you'll lead the bar operation, inspiring your team to deliver exceptional drinks, genuine hospitality and memorable guest experiences. You'll be responsible for maintaining the highest operational standards while creating a vibrant, welcoming atmosphere that keeps guests coming back.

You'll:

• Lead the day-to-day operation of the bar, ensuring exceptional standards at all times
• Recruit, train, develop and inspire a high-performing bar team
• Drive a culture of genuine hospitality and outstanding guest service
• Oversee the preparation and service of all drinks, ensuring consistency and quality
• Manage stock control, ordering, GP performance and minimise wastage
• Monitor labour costs and support rota planning to ensure operational efficiency
• Maintain full compliance with licensing, health & safety and food safety regulations
• Lead team training, coaching and development through regular feedback and support
• Work closely with Front of House and Kitchen teams to deliver seamless service
• Analyse performance, identify opportunities and drive sales growth
• Create a positive team culture that reflects the values of The Last Exchange
• Ensure the bar remains clean, organised, stocked and presentation-ready at all times

What We're Looking For

• Previous experience as a Bar Manager or Senior Assistant Bar Manager in a high-volume hospitality environment
• A genuine passion for drinks, hospitality and guest experience
• Strong leadership and people development skills
• Proven experience managing stock, labour and financial controls
• Excellent communication and organisational skills
• Ability to lead from the front in a fast-paced environment
• Commercial awareness and a strong understanding of business performance
• High standards and strong attention to detail
• Positive, proactive and solutions-focused approach
• Flexible approach to evenings, weekends and peak trading periods
